Soda: Ever Try a Shrub or a Switchel?

For my birthday last week I got a book on how to make sodas — Homemade Soda by Andrew Schloss. I already have my trusty seltzer maker and with the book I can make all kinds of new concoctions. One of the chapters is about shrubs and switchels. A switchel is a beverage flavored with molasses, ginger and vinegar, and shrub is a fruit drink with vinegar added. I had never heard of these, but apparently these were developed during Prohibition. Since I am a vinegar addict, I love this idea.

Other drink recipes in the book include: Pomegranate Punch, Chai Fizz, Fruity Root Beer, Sparkling Orange Creamsicle, Honey Cardamom Fizzy Water, Sparkling Espresso Jolt, Cold Fudge Soda, Lightly Salty Caramel Seltzer, Sangria Shrub, Maraschino Ginger Ale, Malted Molasses Switchel, or Berry Vinegar Cordial. I am not into a lot of sugar so that will prevent me from making a bunch of these, so I will concentrate on the shrubs and switchels.
